Biko Bisaya Style
Ingredients:1 cup of pilit rice 1/2 cup white sugar 1/2 cup brown sugar Anis star 2 little pieces 1 can of coconut milk (1 can is equivalent to 2 cups for those who don't use can coconut milk) Procedure:
*Rinse the rice for two times *Then cook it in Medium fire for 7 -10 mins,if kumulo na lower the heat into low :) For Latik Sauce *Add the coconut milk,sugar and anis into a clean Pan & don't forget to add a pinch of salt to balance the taste of sweetness. *Stir it continuously for about 5 to 10 mins at para din hindi aapaw at para hindi ma over burn yung sauce or ( latik) *So How would you know if saucy or ok na yung latik? first check the consistency if you see its creamy of saucy-like then its done! *Set aside a cup of latik for the toppings. *Then add the rice into latik *Stir it but dont over mix kc baka ma over cook yung rice ( ma lata in bisaya) then,let stay in a low fire or pauyupan for 3 to 5 mins. *After mauyupan bring it into a baking pan with a parch paper ,even flaten then add latik sauce as a toppings *Reheat 180 degrees and bake it for 30 to 35 mins. *If walang oven just let it for stay for 3 to 6 mins in low fire ( pauyupan) Notes: If you want to try this recipe but you would make for more than 1 cup then you may adjust the mesurrements. (2 cups rice plus 2 cups of sugar 3 cups coconut milk and 4 pcs anis star)
Tips: DONT OVER MIX THE RICE WHEN COOKING.
